Clean Eating: My Go-To Greek Salad Recipe

Here’s the truth: I’m not a salad person. I really only like eating them if I have some type of fitness or nutrition goal in mind. With that said, if I’m going to eat a salad, it better be a salad with huge bursts of flavor. Topping salads with a hot lean protein also helps satisfy my cravings for something “hot and delicious.” I’m so excited to share one of my favorite salad recipes with you. It’s flavorful, filling and health conscious. I hope you enjoy!
Ingredients
1 cucumber, sliced into 1/4-inch thick pieces
1 large red bell pepper, diced
1 yellow bell pepper diced into large chunks
1 pint of cherry or grape tomatoes halved
1/2 red onion sliced into slithers (don’t forget to soak these in water for 15 min)
1/2 pound feta cheese diced into 1/2-inch pieces (crumbled also works nicely)
1/2 cup of pitted kalamata olives
Your favorite Greek dressing (If time allows, make your own using the delicious Greek dressing recipe found here)
Here’s what makes this salad so flavorful – you toss it all together, add your dressing, and then let it marinate for about 30 minutes. After, you place it all on top of a couple of handfuls of romaine lettuce and add a protein if desired. I love adding shrimp! I just add salt and pepper to the protein, and saute it in a pan with a couple of tablespoons of olive oil. Bon appetit!
