Eating Clean: Brussels Sprout Salad

I’m so excited to share another delicious recipe with you! Brussels sprouts may be an acquired taste for some but I love them because they are filled with nutrients and rich in antioxidants. I added grilled chicken to my salad but this recipe is super yummy as-is – fresh, vitamin-packed, and tasty, this is the perfect mid-day dish!

BRUSSELS SPROUT SALAD

SALAD INGREDIENTS

1.5 pounds fresh Brussels sprouts
1 Granny Smith apple
1 teaspoon lemon juice
1/3 cup dried cranberries
1/4 cup walnuts chopped
2 ounces feta cheese crumbled
Optional: 1 – 2 pounds of a protein of your choosing – I used chicken but salmon is another fantastic option!

DRESSING

1/3 cup olive oil
3 tablespoons cider vinegar
1 tablespoon fresh lemon juice
2 tablespoons honey
1.5 teaspoons Dijon mustard
1/2 teaspoon garlic powder
Salt and pepper to taste

DIRECTIONS

Combine all dressing ingredients in a small jar and shake well to combine.

Shred Brussels sprouts, rinse well, and dry. If you’re including a protein, cook it using your favorite recipe.

Chop apple and toss with lemon juice to prevent browning.

Combine all remaining salad ingredients in a large salad bowl. Toss with dressing and serve!
