It’s the second full week of the new year and you know what that means. Time to check in on all of those health and fitness goals we set on January 1! No matter what your goals look like for 2022, nourishing meals are essential to maintaining overall health and wellness, so I’m sharing a salad my friend Chef David prepares that’s super delicious and super nutritious! As with every recipe on Bene by Nina, the ingredients below can be adjusted to meet your dietary needs. Sticking with a healthy meal plan is all about changing things up, so go ahead – experiment and have some fun!
CHEF’S CHEF SALAD
SALAD INGREDIENTS
(1 serving)
2 cups of romaine lettuce (1 head)
1/4 cup of sliced deli turkey*
1/4 cup of sliced salami*
2 pieces of bacon
1/4 cup of diced sharp cheddar
1 quarter of a red onion (soak in water for 10 minutes)
1 boiled egg
1 handful of cherry tomatoes, halved
Optional Ingredients
1/4 cup of cucumber
1/2 of a medium avocado diced
1/4 cup of feta dressing
*this salad is also delicious without any meat product at all!
DRESSING
(makes 1.5 cups)
1/2 cup of mayonnaise
1/2 cup sour cream
5 oz feta cheese crumbled
3 tablespoons of lowfat milk
2 cloves of minced garlic
1/2 teaspoon of dried oregano
2 tablespoons of chopped fresh basil (or sub fresh dill)
Salt and pepper to taste
DIRECTIONS
Combine all dressing ingredients in a food processor and pulse 10 times, allowing the dressing to stay a bit chunky. Place in the fridge and let sit for one hour before dressing your salad.
Combine all remaining salad ingredients in a large salad bowl. Toss with dressing and serve.
